Williams Gin is elaborated using the best organic apples in Herefordshire. After much experimenting, homegrown organic cider apples are turned into apple chase vodka and distilled into a crisp gin to make the perfect gin martini (because real martinis are made from gin!). Each batch is distilled 100 times by passing twice through a copper pot and unique 70 foot column, with its 42 bubble plates, then finished in a little Carter Head style still, 'Ginny', to gives us all the perfect gin.
Tasting note: Gently infused with a choice of wild botanicals and naturally pure water from the aquifer running under their home estate, the gin captures the true taste of juniper, highlighted by the sweetness of apples, elderflower and hops.
William Chase Distillery was founded in 2004, when William Chase, a farmer with 20 years experience, looking for packaging equipment in the USA for their so well known chips, stumbled on a small distillery making potato vodka and thought this would be a great new chapter to his life. So he returned... home, thought about it and decided it would definitely be more fun making vodka. He thought there would be a market if they could make a quality produce and sell it with the provenance and pedigree. Shortly afterwards William sells chips Tyrrel's brand to a multinational firm to finance his life project. From the idea in 2004, it took them until April fool's day 2008 to make the first of their potatoes and then make the first batch of vodka in June 2008. The first William Chase Vodka drop sees the light in 2008 after two years of hard work. The spirit is produced from a traditional copper still. In 2010 his efforts were rewarded when it was awarded among 247 competitors as 'the best vodka in the world' at the prestigious San Francisco World Spirit Competition Once they had perfected their vodka they moved onto making liqueurs using their fine potato vodka and fresh fruit all made on their farm in Herefordshire. He comes to the conclussion that a gin needs a fruit base like the one coming from their apple cider and not a distillation based on potatoes. He then considers the best combination of flavors to create a unique Gin, the Elegant Crisp Chase Williams Gin. It is the only distillery in the United Kingdom controlling the entire process, from seed to the bottle, producing its own raw materials in a traditional and rural environment.
