Rubaiyat 2008 is made from Syrah coming from the Barranco Oscuro, Hoyo and Cerro de las Gayumbo estates.
All the vineyards are grown naturally, without herbicides, pesticides or synthetic fertilizers.
Handpicked doing a rigorous selection of grapes in the same strain. Stemmed grapes maceration in stainless steel tanks. Spontaneous fermentation without adding yeast or any other product. Temperature of fermentation has not been altered. Natural malolactic fermentation during the ageing in barrels in the underground cellar. The use of sulfur has been extremely limited by avoiding direct contact with the juice. The result is a wine free of sulfites. No additives or preservatives have been used. No fining or filtering.
Ageing for 36 months in stainless steel tanks and oak barrels of different origins-French oak dominating-. 36 and 24 months of drying, facilitating the development of the wine without masking its natural organoleptic characteristics .
