In the past five years the winery has been focused on getting a wine of great complexity and structure, but maintaining the freshness of youth.
To get this, "during this period we have been doing some research in our most characteristic vineyard - La Caprichosa - and various experiments related to the producing process, working with prefermentative maceration, long fermentation, maceration on lees, and so on." said Pilar García del Pino, the winemaker of the winery. "And all this effort and dedication have resulted in the wine which is now released, the Palacio de Bornos La Caprichosa" she says.
The Palacio de Bornos la Caprichosa is elaborated with 100% Verdejo. Long pre-fermentation maceration, slow fermentation and three-month stay on its lees.
Tasting notes: Bright straw yellow colour, with green glints. Nose: intense and complex aroma, with notes of ripe white fruit and mineral hints. Palate: fresh and generous, with volume, mild and lingering.

In January 1976 (7 years before the establishment of the D.O Rueda) Antonio Sanz decided to found his own winery in Rueda and became winemaker and owner of Bodegas Palacio de Bornos. Being a man of great foresight he already knew about the promising potential of the area’s soil and climate as... well as the unique characteristics of the Verdejo. This innovative oenologist started producing young fruity white wines, harvesting mainly by night. He introduced Sauvignon Blanc and pioneered the production of sparkling wines in the region.. His work has won numerous awards and recognition throughout his career.
