An Organistrum is a medieval hurdy-gurdy stringed instrument played by two minstrels during poetry recitals held in the medieval villages and towns near Santiago de Compostela. The master architect Mateo sculptured it in stone, in the Porch of the Gloria, in Santiago Cathedral.
Organistrum wine is made from grapes selected from Southwest facing plots of land located 110 metres above sea level. Alcohol is fermented in temperature controlled stainless steel vats. Malolactic fermentation takes place in oak casks over a period of three months. Lastly, the wine is returned to the stainless steel tanks for seven months to achieve perfect integration.
Tasting Note: 100% Albariño. Alcohol content: 12º Vol. Appearance: a yellowish-straw colour with hints of gold. Aroma: Medium intensity on the nose with complex aromas, denoting a substantial fruity load along with delicate nuances of reduction on a slightly toasted base. Green vegetable nuances predominate. Palate: impressive elegance on the mouth. Full-bodied at the entrance, very well sustained by toasted tastes and growing fruit, integrated acidity. A wine that calls for time to open up and prove itself.

Very well exposed in the nose: ripe fruit, white woods, floral, herbaceous, dairy. Fresh and fluid in the mouth, well balanced, dry, serious.
