The 2007 Nun Vinya dels Taus is 100% Xarel-lo sourced from 65- to over 100-year-old vineyards which are biodynamically farmed. The wine was aged for eight months in 228-liter Burgundy barrels. Light gold-colored, it gives up an alluring bouquet of spring flowers, honey, waxy apricot, and peach. Creamy and elegant on the palate, it has outstanding depth, balancing acidity, and a lengthy finish. Drink it over the next four years.

Bright yellow. Powerful aroma, ripe fruit, sweet spices, creamy oak, herb dressing. Palate: fatty, smoky aftertaste, tasty, fresh, good acidity.
Pairing: Fish Stew, Omelets, Pasta, Semi-mature Cheese, Soups and Creams.
A small winery with a small plot at the end of Torrelavit (the Vinya dels Taus) in the Penedes, and a philosophy of working in a vineyard, spoiling the bunch so you can offer all its flavor and depth, and without any subsequent intervention scrupulous care in the cellar.
From the 2005... harvest, Enric Soler and his team the vineyard according to biodynamic principles.
