The winery where Gaston Coty is elaborated was built in 1906; it is the most ancient of Sant Sadurní' d'Anoia, The Champaign´s capital. It has traditional facilities of 1286 m ², of which 928m ² are underground with arched ceiling in several wine-cellars. This construction is important... to obtain of natural ways a stable temperature between 18 and 20 degrees, a total semidarkness, as well as absence of noises and vibrations; essential factors to age quality wines of Cava. One of wine-cellars is used to guard varietal wines and assemblages of different vintages. The above mentioned aging is carried out in magnum bottles. Some of these wines had fermentation - or part of it - in cask. Manuel Martínez, professional linked to the wine and the champaign with more than 32 years of experience, is at the same time ´ artist, manufacturer, technician and passionate ´ of the wines, who initiates the project L'Origan, with the help of his son Carlos.
