La Prohibicion is made from Grenache Tintorera (60%) and Mencia (40%). This wine has been made under the philosophy of maximum respect for the land and soil. These vineyards have not been farmed or contaminated with herbicides. The clusters are chosen in the selection table and squeezed without destemming. Fermentation for 12 days at 24-25ºC and maceration for 15 days. Ageing in new French oak barrels for 24 months.

The casks in which they age their wines silenty sleep in a sturdy stone farmhouse. When making Pittacum they seek the finest grapes (Mencía variety) from different parts of Bierzo area, monitoring their development all year round as scrupulously as in their own vineyards.With plantation densities ranging between 4.000 and 4.500 stocks per hectare. Rather than applying any chemical herbicides or synthetic plant-care products, they make judicious use of 100% organic fertilisers.
