The Freixenet Cuvée D.S. 2006 is elaborated with 40% Macabeo, 40% Xarel.lo and 20% Parellada. It is an evolved cava with touches of reduction due to the long aging in contact with the lees. It is made only using base wines from the best vintages.
Tasting notes: Intense yellow color. Fine and persistent bubble. Nose: elegant, with nice toasted hints. Soft carbonated and pleasant feeling. Good balance between acidity and body. Palate: rich in flavors and very intense background. The bottling dosage is made with wine aged in chestnut barrels.

The 2006 Cuvee D.S. is made from the three traditional grapes but with extended time on the lees and a moderate dosage of 4 grams. Its persistent small bubbles and sophisticated aromatics make for a terrific value in sparkling wine.
Francesc Sala i Ferrés founded the house ´Casa Sala´, the first wine exporting brand in Sant Sadurní d´Anoia since 1861. His son Joan Sala i Tubella took the business and it was after the weeding of his daughter Dolors Sala i Vivé with Pere Ferrer i Bosch that the cava business started, in 1914.
