Dolç de Mendoza is made from grapes harvested at the winery's own vineyards located in Villena. This wine is only made in certain years due to the good quality and healthy grapes needed to resist the over ripening of the plant until they can be harvested in the first week of December. Fermentation in stainless steel deposits after being squashed and destalked. The yeasts transforms the sugar concentrated in the grapes into alcohol achieving a 14% concentration in alcohol. Due to this alcoholic concentration many of the yeasts die leaving thus a lot of residual sugar providing the wine with a fair amount of alcohol concentration and sugar. The American Oak barrels soften the tannins providing the wine with toasted and smoked aromas. Bottled without applying cold temperatures or clarification process which may cause the apparition of natural sediments.
Tasting notes: Cherry red colour. Nose: aromas of berries, smoked and spices like cinnamon and clove. Palate: soft tannins and acidity. Smoked aromas and toasted bread aftertaste.
Pairing: Blue Cheese, Chocolate, Desserts, Ice Cream, Pastry.
This winery was born thanks to the passion for wine. And this passion has never stopped growing. The project was forged at the end of the 70's, when Enrique Mendoza became extremly interested in world of wine and decided to continue the tradition in 'La Marina Baixa' of making wine for family... consumption. Today, the first plants have transformed into two wineries, one for the ageing and bottling of the wine in Alfaz del Pi, from which the wines are positioned in the national and international markets, and a second one in Villena ('Finca El Chaconero'), close to the 'Virgen de las Virtudes' sanctuary.
