In 1966 Diana and Kevin Cullen planted an acre of experimental vineyard (now they have 73) on his property of sheeps and cows on Willyabrup, on Margaret River. Reveille has elaborated Cullen's wines together with his daughter up to his death. From 1989, Vanya Cullen titled in enology by... Roseworthy's renowned university, directs the whole process. The Cabernet Sauvignon was planted in 1971 and follows the Scott Henry´s system, who according to Vanya, is a critical factor to produce fruits with smooth and ripe tannins and a marked profile of black fruits. The harvest is manual when the ideal degree of ripeness and flavor is reached. Around 10 up to 50 % of the wine is partially fermented in cask immediately after harvesting. To the rest a prolonged maceration is given before ageing in cask (30 % new French of thin grain). The fruit definition and the global balance are typical notes in Cullen´s wines.
