The 2005 Cesar Principe is 100% Tempranillo sourced from two 60+-year-old vineyards in the D.O. of Cigales. It was aged for 16 months in new mostly French and American oak. Purple-colored, it offers plenty of toasty new oak aromas as well as mocha, coffee, and minerals, with some blackberry fruit lurking in the background. This leads to a firm, structured wine with ample ripe, spicy black fruits and enough structure to evolve for 3-4 years. Currently the wine’s finish is a bit compact and hard. Give it several years to evolve and hope that age will bring more harmony.
Pairing: Aged Cheese, Game Animals, Grilled Red Meats, Legume, Roasts, Stews.
