The Cérvoles Estrats is made with Cabernet Sauvignon 65%, Tempranillo 20% and Grenache 15 %
Aging: Garnacha and Tempranillo in new Allier barrels of French oak (MT+) of the Radoux cooperage (Radoux Blend is a selection of French extra-fine grain oaks). Tronçais oak of the Taransaud cooperage for the Cabernet Sauvignon. During 18 months and with periodic bâtonnage in the first 5 months to contribute to voluptuousness and volume of the coupage.
Tasting: Ruby robe with violates tones. Very dense and tinted tears. Of attractive and intense aroma, with parade of Cérvoles tipicity (flower of lavender, thyme, Rosemarie, dead leaves of evergreen oak). In background we discovered slight vanillas, notes of toasting, memories of cedar, and finally explosion of wild berries (jam of raspberry, bilberry), fresh cherry pillory. Sweet-toothed palate, simultaneously greasy and imposing. Immensely great mature tannin concentration,integrated during the passage by mouth. Sweet ending, with comfiture memories of mocha and certain mineral notes. Elegant and pleasant persistence in mouth of this great wine.
In 1997 and after an intense research of properties and suitable microclimates for the implantation of new vineyards within the zone of the Denomination of Origin Costers del Segre, the Cusiné family, one time analyzed the possibilities and discovered the great characteristics of the vines and... wines of La Pobla de Cérvoles, acquires the present property of Cérvoles Celler.
On the northern slopes of Montsant and, protected by the Sierra de la Llena, range lies La Pobla de Cérvoles, a township administratively integrated in the region of Les Garrigues and the Denomination of Origin Costers del Segre. This region has a complex geography with numerous hills and valleys winding their way to the north and rises to the south to meet the Sierra de la Llena. This marks the border between Lleida and Tarragona, simultaneously separating the region from the Priorat and La Conca de Barberà.
Cérvoles Celler is a property of 102 hectares, with 32 hectares of vineyards of the varieties cabernet sauvignon, tempranillo, merlot, grenache, chardonnay and macabeo, planted mainly between years 1960 and 1989, distributed in 10 different plantations. These have different slopes and sunlight all around the area, enjoying a very smooth climate in spite of the hardness of the zone. Located between 700 and 750 meters of altitude they have an average of 450 mm of annual rains, suitable amount to quality grape growing. The texture of grounds is franc (franc-slimy, franc-gravely), with different gravel levels. The permeability of this underground gravel allows a good drainage, as well as the clays provide considerable humidity, forming altogether a good hydro-balance.
After the foundation of the company Cérvoles Celler, it starts a vast reconduction of the vineyard with the objective of increase the foliar surface by kilogram of grape simultaneously that improves the wine-making methodology to obtain the best quality of wines.
The great personality that transfers the microclimate to the wines and its great quality, was the main reason to decide to contribute to the necessary means and knowledge to transform a company and vines into a high quality brand in the international market.
Fruit of the characteristics of the vineyards and the zone in which they are based, they have high degrees of alcohol, extract, color, and the most important, a pronounced and common personality in all the cultivated varieties.
These virtues allow them to play between limits to be discovering, year after year, all the potential of quality which their grapes have. Nowadays the wines of Cérvoles are member of the exclusive group Grandes Pagos de España (Great Growths of Spain), a wine estates association from all of Spain's regions, united to defend and promote the culture of single-estate wines, produced on specific vineyards and reflecting the unique personality of their soils, subsoils and climates. This is an ages-old concept of quality wine, which it has been recently recovered.
