Baigorri Crianza is made from Tempranillo grapes and small proportions of other regional grapes. Grapes have been hand-selected and destalked bunch by bunch, using sorting and vibration tables. Maceration in stainless steel tanks with temperature controls and long intracellular fermentations. Aged in French and American oak barrels. Ageing for fourteen months in new barrels and the rest in bottles.
Tasting notes: Dark cherry colour. Nose: black fruit, spicy, pastry and milky aromas. Long in the nose. Palate: long lasting.
Pairing: Aged Cheese, Game Animals, Grilled Red Meats, Legume, Roasts, Stews.
A different sort of winery, where all wine making processes have been examined and gravity has become the main ally, thus avoiding the use of pumps, chutes and machinery in general which can damage the grape. The architecture has been carefully chosen to blend in with the landscape. It is... adapted to the existing topography and developed underground, thus adopting a submissive, respectful position to the surrounding environment.
