This is the first year that the indigenous variety of Callet has been used, after skilful blending with the Premsal (Xarel.lo), to produce this young, white wine. Fermented at low temperatures and aged on its lees for a period of 3 months, to produce a fresh and elegant varietal wine.
GRAPE VARIETIES: 60% premsal (xarel.lo) and 40% callet
HARVEST: Grapes are carefully hand picked using small 10kg boxes and are chilled in a chamber upon arrival at the winery. Manual selection of the best grapes then takes place on a bed of dry ice to prevent oxidation. Cold maceration of the Premsal grapes at 12º over a period of 10 hours in a carbonic atmosphere. After pressing, clearing takes place in special tanks followed by fermentation at 17º. Fermented and aged over lees in stainless tanks of 7,000 litres for around 3 months.
Situated to the south-east of Mallorca, ÀN Negra winery produces its wines on the old country estate of Son Burguera close to the town of Felanitx. Current wine making is nothing more than a continuation of our ancestral activity and it is against this background that ÀN Negra was born. ... />The respect shown to the individual features of the soil and the cultivation of the indigenous varieties (manto negre, fogoneu, premsal and, above all, callet) has formed the basis of our philosophy in the way we approach our viticulture and this is reflected in the wine itself. Born of the unique symbiosis of the climate, the land and the indigenous varieties, our inimitable wines are honest and distinctive and challenge the current trend of producing impersonal wine. It is this premise, together with the aim of offering a product of the highest quality, that marks the day-to-day running of ÀN Negra.
