Ànima Negra ÀN is made with 95% Callet grape and 5% Fogoneu and Manto Negre.
Between 40 and 60 years old, goblet-pruned vines.
Manual harvest and selection of the grapes.
Fermentation at controlled temperature in cement tanks and wooden vats of 5,000 and 3,000 litres respectively.
Maceration for 25-30 days average.
Malolactic in barriques (60%) and the rest in cement tanks.
Aged for 18 months in new French oak barrels with fine to very fine grain and medium-low toast.
