When an Oloroso is sweetened with some concentrated Pedro Ximénez sweet wine, it becomes a Montilla Cream, a synonym of dark, full, rich, sweet not cloying wine.
Colour: Deep mahogany colour. Nose: With a slight burnt touch, and a full, soft, somewhat raisiny flavour. Palate: Clean finish and a lingering sweetness in the mouth.
Food Pairing: Serve to sip on its own as a comforting winter drink instead of a liqueur. Ideal for both aperitifs-accompanying pâtés-or for dessert with sweets, light cakes, coffee or nuts. Taste it on the rocks!
What the critics say...
Robert Parker: 95 points(01/06/2005)
The extraordinary non-vintage Solera Cream represents an Oloroso sweetened by the addition of ripe Pedro Ximenez. A medium amber color is followed by a nutty, liqueur-like liquid with tremendous unctuosity and freshness in addition to a long, moderately sweet finish. It is a great after-dinner drink to enjoy by itself.
