Fortified wine with grape spirit to reach a high alcoholic strength. Matures and aged for more than 10 years in oak barrels where no flor develops. In this wine, the Pedro Ximenez reveals a less well-known aspect of its character and its sweetness is an extraordinary traverse of the boundary between sweet and dry wine
Colour: Dark hues of old gold, rich dark amber colour. Nose: Deep, raisiny intense aromas and dry to very dry flavour. Palate: Reminiscent of delicate toasted pastries. Silky, soft on the palate with a dry, full, long, graceful finish associated with lengthy cask ageing.
Food Pairing: A wine to be drunk in mid-morning and also in the afternoon, at tea or other refreshment, or with desserts. It is a perfect substitute of brandy, to be accompanied with nuts. For the most audacious, serve with meats accompanied by trick sauces.

The extraordinary non-vintage Oloroso Asuncion is a medium dark amber-hued, dry, rich, intense effort displaying an amazing perfume of walnuts and honey. Full-bodied, dry, powerful flavors linger on the palate. It is a steal at this price. Drink it with sushi or any number of tapas dishes.
Pairing: Blue Cheese, Chocolate, Desserts, Ice Cream, Pastry.
