Literally, Amontillado means “in the style of Montilla” doubly a true Amontillado, it originates in Montilla and has developed through long ageing, more than 15 years, in oak butts both during and after the flor, gaining thus colour, complexity and full round aroma while retaining the freshness of its origins as a Fino. A harmonious blend of finesse, elegance and age.
Colour: Dry wine with light chestnut bright gold colour. Nose: Pungent well developed bouquet, inimitable nutty and dried fig deep flavor and character both soft and strong. Palate: Silky dry on palate with long finish.
Food Pairing: Suitable as an aperitif with nuts. Also excellent ingredient for all soups and sauces, especially consommé. Ideal with smoked foods and crumbly cheeses.

The non-vintage Amontillado Carlos VII is far superior to the regular bottling. From a 25-year old Solera system, its medium to dark amber color is accompanied by a medium to full-bodied sherry revealing loads of pungent, earthy, nutty notes, a slightly oxidized character, and a long, persistent finish.
