Winemaking Red wine produced principally from Syrah, grown on southeast facing terraces and slopes upon the characteristic "sauló" soil of D.O. Alella. The wine undergoes cold maceration for 5 days before beginning a fermentation period of 20 days at a controlled temperature of 25ºC. Malolactic fermentation occurs in the beginning stages of its 10 month ageing period in French Allier oak barrels. Light clarification and stabilization are performed before bottling.
Pairing: Aged Cheese, Game Animals, Grilled Red Meats, Legume, Roasts, Stews.
