This is an Albariño of centennial stocks. Once the must is racketing, will rest in casks for a six months period, where the alcoholic fermentation will take place. A weekly Batonnage is regularly done and will remain till organoleptic characteristics are acquired:
Clean, shiny and golden straw yellow. Aromatics of ripe fruit (apple and pineapple), balsamics, toasted notes, tea leaf, cigar box, smoked, mineral, and dried fruits. In the mouth is oily, fresh and well balenced, very tasty, ample, powerful, vivacious, very concentrated and with good body, characteristics which predict a long lasting life. It mixes well with seafood, white fish in creamy sauces, baked blue fish, sausages, white meat and roast birds.
